Prepare your cold brew coffee in advance, allowing it to steep for 12-24 hours.
In a mixing bowl, combine heavy cream, pumpkin puree, sugar/maple syrup, vanilla extract, and pumpkin spice mix. Whisk until the mixture becomes frothy.
Fill a glass 3/4 full with cold brew coffee.
Gently pour the frothy pumpkin cream over the back of a spoon so that it floats atop the cold brew, creating a layered effect.
Sprinkle a dash of pumpkin spice on top for garnish.
