I guess, if you have to, J/K! Instant coffee can be used as a substitute if you don’t have an espresso machine, but the taste and richness of the latte may be compromised. Espresso offers a bolder flavor and a smoother texture. You should look into a Moka pot, it’s a fraction of the cost of an espresso machine, and it still makes great espresso.
